June 2010 Challenge: Zucchini

  • Shredded Zucchini – a quick, simple recipe
  • Zucchini Brownies – According to the reviews, they are more cake-like than brownie-like, but a good healthy dessert nonetheless. Some people said it was a little drier than they expected, so they added applesauce, but I think I would want to try subbing agave for the sugar.
  • Zucchini Strips – Kind of like a chip?
  • Lasagna Tart – looks too good to pass up! (this one’s from Tish)
  • Zucchini, Mint, and Yogurt Spread – definitely different! (From Tish – Laura, is this how you want us to post??)
  • Zucchini Pancakes – taken from back of Dynasty Panko Japanese Style Breadcrumbs box:

1/2 lb zucchini (2 small), washed & trimmed
1 lg egg
1/2 c Dynasty Panko Japanese Style Breadcrumbs
1/4 c grated, fresh Parmesan cheese
2 Tbs minced yellow onion
1/8 tsp garlic powder
1/8 tsp black pepper
vegetable oil cooking spray

Coarsely grate zucchini in bowl. Add egg, panko, cheese, onion, garlic powder, & pepper; mix well. Heat large frying pan over high heat. Lightly coat w/ cooking spray. Drop rounded tablespoons zucchini mixture into pan, allowing room for spreading; flatten slightly. Cook over med-high heat 2-4 min each side, or until lightly browned. Remove from pan. Keep warm. Repeat. Makes 4 svgs

  • Laura’s Mom’s Zucchini Saute – Does not include exact amounts or directions. Must be able to accept a certain amount of culinary ambiguity to make, but recipe is so simple it’s hard to screw up. 🙂

zucchini, thinly sliced (if large, feel free to cut in half or quarters)
yellow squash, thinly sliced (if large, feel free to cut in half or quarters)
onion, chopped (smallish amount, not too much as there should be more squashes than onion)
garlic, minced (maybe 1-2 cloves)
tomato, diced small
Italian spices (dried oregano, basil, etc.)
bit of olive oil


  1. Saute onion and garlic in small amount of olive oil for a few minutes until it begins to soften
  2. Add zucchini and squash, cook until tender, stirring often
  3. Add diced tomatoes and dried Italian spices to taste, stir and cook ~1 min to warm tomato
